Saucy Enchilada Meatballs

This is were the love all begins. The seasoning! With Meatballs it is KEY! Start with the Spice Shack basic Southwest blend then….

Move on to the Spice Shack Booster! Which is the kick that makes these meatballs so great! This is the heart of the Spice Shack!

In a dutch oven or braising pan sautee the onions, peppers and you could even add in mushrooms too!.

Then you just add the roll balls. You can play here too. Make them mini or large and in charge. Both ways are FUN!

Time to add the spice shack enchilada sauce! Pour the sauce over the meatballs. Bake for about 30 minutes.

The Recipe!

The MeatBall:

  • 1 pound ground beef or pork or combo

  • 2 tbsp Southwest Booster

  • 1 tsp Southwest Blend

  • 1 egg

  • ¼-1/2 cup oats

  • ½ finely chopped mushrooms

  • 1/4 tsp salt

Mix together and make into balls


The Sauce:

  • 2 tbsp chili powder

  • 2 tbsp Spice Shack southwest blend

  • Spice Shack Booster

  • 2 tbsp rice flour

  • 3 tbsp + 3 tsp brown sugar

  • 1 can tomato paste

  • 1/4 cup Avocado Oil

  • 3 Cups Broth

Add oil to a pan on medium heat. Add the first 3 ingredients, whisk and cook the spices for about 5 minutes. Sprinkle the flour and whisk again till the flour is cooked. Next up is the broth. Whisk in and combine, bring to a low boil. Will add in the tomato paste and brown sugar, combine and cook for around 15 minutes on a low boil, and stirring frequently.

Turn off heat, let cool for 15 minutes. Pour into a blender. I let it cool down till safe to blend. Once ready blend away till smooth!

Store for up to a week or freeze. This makes 3 cups!

Putting it all together

In a dutch oven or braising pan saute one onion, one pepper in a tablespoon of oil. You only need to do it for 5ish minutes. You just add the meatballs and cover with enchilada sauce. Cover and cook for 30 minutes. If you wish you can add shredded cheese for the last 5 minutes. I serve over rice, spaghetti sauce, or even just put into a tortilla! I love adding in sour cream, avocado, cilantro even black beans to give more texture and flavor! Have fun with it!
